I finally managed to switch to a new blog! It’s been long since I promised myself to do it, but I’ve been disturbed constantly by the lack of the Internet, a broken computer , bad weather conditions and so on… :). But I promise that I will force myself to publish posts regularly. Maybe I will manage to do it with this new blog? So, cross your fingers!
For a good start, one thing I enjoy the most which are sweets, or rather one more variation on muffins. Lately, I’ve been obsessed with nuts and generally I try to choose what I eat consciously. That’s why nuts are my top one and I decided to bake those muffins.
- 3 tbsp peanut butter
- 2 cups plain flour
- 2/3 cup icing sugar
- 1 cup oat milk (or soya, etc.)
- 1/4 cup vegetable oil
- 2 tsp baking powder
- 2 tsp vanilla sugar
- 1/2 cup peanuts
- chocolate coating
Place a bowl in a pot with hot water. Put peanut butter and icing sugar into the bowl and stir firmly. Add oat milk and oil and stir again. Combine flour, baking powder and vanilla sugar and then gradually add to the wet ingredients stirring all the time. Finally, add chopped peanuts (don’t chop them to much) and put the dough into muffin mould. Bake about 20 minutes in 200 degrees. After the muffins have chilled melt some chocolate and put it on them.
