Beans, rice and broccoli salad

It’s been a while since I’ve last presented a salad recipe. This one came up accidentally because very often I prepare salads using mostly ingredients which I have at the moment in my fridge. The result is sometimes poor, but sometimes I am really delighted. This salad has an interestng taste esepecially because of the touch of arabic cousine (thanks to tahini and cumin). It is also protein rich thanks to beans. I can certainly recommend it as a light and healthy supper.

Ingredients:

  • 200g brown rice
  • 2 cups cooked beans
  • 1 broccoli
  • a handful of black olives
  • small onion
  • 3 tbsp olive oil
  • 1 tbsp tahini
  • salt, pepper
  • 1/2 tsp sweet paprika
  • 1/2 tsp cumin
  • 2-3 tbsp lemon juice
  • 1-2 garlic clove

First, cook rice and beans (separately). Steam broccoli for about 5 minutes and then chop it. Slice olives and chop the onion. Mix olive oil with tahini, lemon juice and chopped garlic. Add salt, pepper, sweet paprika and cumin. Now, put rice, beans, broccoli, olives and onions in a bowl. Add the dressing and blend it together.
