Pancake tower

I was planning this for a long time. Well, sometimes it’s just almost impossible to overcome laziness, for example it’s a lot easier to fry three big pancakes instead of fourteen small ones! (there are exactly fourteen in this photo :) And what can I do about my love for pancakes? They save me each morning I find my fridge empty and the nasty weather just won’t let me go out for some small shopping. Fortunately, there is always some flour and homemade jam hidden in the cupboard :).

Ingredients:

  • 1 cup wholemeal spelt flour
  • 1 cup plain flour
  • a pinch of salt
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 2 tbsp vegetable oil
  • 1 cup vegetable milk
  • 1/2 cup fizzy water
  • vegetable oil for frying
  • jam

Mix the dry ingredients together. Add oil and milk and again mix adding the fizzy water gradually. The dough should be thin so that the pancakes won’t be too thick. If needed, add more fizzy water. Fry small pancakes using a bit of oil. After that put each pancake at the top of the tower and decorate it with jam or other fillings. You can decorate the topmost pancake with agave or maple syrup or icing sugar.

I also prepared special tofu filling and it was quite easy.

Ingredients:

  • 100g tofu
  • 125g natural soya yogurt
  • 1tbsp icing sugar

Crumble the tofu using fork, add icing sugar and yogurt and mix till you get a smooth filling.

I am wondering if anybody could eat all those pancakes by him or herself at only one approach? :)
