Finally, something sweet! Maybe it’s not the right season for cherries, but still we can use the frozen ones :). I was thinking about this delicious couple, moreover I got beautiful silicone star shaped muffin moulds and I had to try them. This is how I prepared those sweet marvels.
I almost always use the same algorithm for muffins, they differ only in toppings or other additives. Maybe it’s not quite original but once I found the right recipe (which hasn’t disappointed me even once) I don’t want to mess anything by trying different options, especially when guest are coming and I can’t afford to mess anything up.
This time I used smaller muffin moulds so I had to decrease the amount of dough and also shorten the baking time. But if you have the regular muffin moulds, just take half more of everything and bake them for about 20 minutes instead of 15 and it should do.
- 2 cup plain flour
- 1/2 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp vanilla sugar
- pinch of salt
- 1 cup vanilla soy milk
- 1/4 cup vegetable oil
- chocolate topping
Combine all the dry ingredients and mix. Add soy milk and oil and again mix until you get a smooth dough. Using tea spoon put the dough into small muffin moulds, put one or two cherries on top of each mould and press it gently. Bake for about 15 minutes in 200 degrees. When the muffins are cool, decorate them with chocolate topping.
