It’s been a while since I posted any recipe here, it’s all because this a bit too long US trip story. Besides, it’s summer time, I travel a lot and don’t have time to cook. When I come around to my parents I try to enjoy fresh lettuce straight from our garden, cucumbers, radish, spring onion, raspberries and strawberries… Besides, it’s too hot to cook. But then one would like to eat, at least from time to time, a nice lunch.
I baked this snack just before going to US and because I enjoyed it so much I couldn’t resist and had to share the recipe with you. It’s a really easy to prepare dish and you can either treat it as a lunch or take it for a picnic or to work. Delicious!
- package of puff pastry (400g)
- 1 can chickpeas
- 1 onion
- 1 garlic clove
- 1kg fresh spinach or 1 package frozen spinach (450g)
- 2 tbsp vegetable oil
- salt, pepper
- ground caraway seed, sweet pepper
Wash the spinach, dry it and chop firmly. Fry chopped onion and when it starts becoming golden add chopped garlic and spinach. Fry for around 2-3 minutes. Add drained chickpeas. Season with salt, pepper, caraway seed and sweet pepper.
Slice the pastry into 6×6 cm squares. Roll each square and put one big spoon of spinach filling in the center of the square. Glue together two opposite corners and also corresponding sides of the square. Bake for about 20 minutes in 200 degrees. The pastry should become slightly golden.
It tastes best with hot sauce, for example tomato or pepper sauce and a mix of salads.
