This year we planted spinach in our garden. It grows wonderfully, with those beautiful green leaves… And I’m preparing spinach salads. First one is very easy, green-red with chickpeas. You can call it an express salad.
- 2 handful of fresh spinach
- 1 red pepper
- 1 big tomato
- 1 can chickpeas
- 1 tbsp pumpkin seed oil
- 1 tbsp grape seed oil
- 2 tbsp balsamic vinegar
- 1 garlic clove
- 1/2 tsp dried basil or few leaves of fresh basil
- salt, pepper
Wash the spinach, dry it and chop (no too firmly). Remove seeds from pepper, cut it into slices. Put tomato into hot water for one minute, then remove the skin and seeds, cut it into cubes. Put spinach, tomato, pepper and chickpeas into mixing bowl. Next, prepare dressing. Mix together oil, balsamic vinegar, chopped garlic, basil, salt and pepper to taste. Combine vegetables with dressing and serve immediately.
I guess it’s a really great lunch. You can serve this salad together with fresh wholemeal bread just to make it more filling.
And now I’m going to kitchen to prepare another spinach salad, this time a little bit different.
