I just came back to Poland after another trip. This time I visited Portugal and also Czech Republic (on my way back home). More than two weeks on the road, many wonderful people, many great places, emotions, experiences, adventures, thousands of photos… And now I feel so tired. I was dreaming about regular, healthy food, rolled oats, groats, many fruits and vegetables. That’s why I decided to take matters into my own hands and from the first day prepare a decent breakfast and delicious dinner. Below you can see the effects. And I’ll tell you about Portugal later.
Oatmeal is one of the greatest and simplest thing you can eat for breakfast. You can prepare it in thousand different ways, it all depends on what you want at the moment and what you have in your fridge. My favourite version is date and coconut oatmeal. The recipe is really simple and it should be enough for two people.
- 1 cup rolled oats
- 50g dessicated coconut
- 50g dates
- 1 banana
- pinch of salt
Pour two cups of water into the pot and boil it. Add oats, pinch of salt, sliced dates and coconut. Cook for around 5-7 min. stirring from time to time so that oats won’t burn. Lastly, add sliced banana, stir and the oatmeal is ready.
Very quick, delicious and very nutritious.
Next I had mocha frapuccino with soy milk in one very popular chain café :).
Next dinner… Groats, groats, groats – my blessing. I really missed groats during all those trips. I somehow encoded in my mind that this is probably one of the healthiest thing you can eat, especially if I think about local (Central European) products. This time I chose millet groats, tofu with vegetables and steamed green bean. Again a very light and nutritious meal.
Here’s the recipe for tofu with vegetables.
- 300g tofu
- 3 carrots
- 1 small leek
- 1 small red pepper
- 3 tomatos
- 4 tbsp vegetable oil
- salt, pepper
- tofu marinade: 3 garlic cloves, 2 tbsp vegetable oil, soy sauce, lemon juice, coriander, turmeric, sweet pepper, white pepper, marjoram, nutmeg, ginger.
Cut tofu into cubes, place them into a plastic container. Add 1/4 tsp of coriander, turmeric, sweet pepper, white pepper, marjoram, nutmeg, ginger and any other favourite spice. Also, add 1 tbsp of lemon juice, 3 sliced garlice cloves, 2-3 tbsp of soy sauce and 2 tbsp of vegetable oil. Stir everything together, cover the container with a lid and put into the fridge for few hours (it’s better to marinate tofu in the morning or even the previous day).
Grate carrots, slice the leek, peel the pepper and also slice. Heat the pan with approx. 4tbsp of vegetable oil, add vegetables and fry. In the meantime put tomatoes into a boiling water for a few seconds, then peel them and slice into cubes. Add tomatos to frying vegetables and stew for few minutes until carrot, leek and pepper become soft. Fry tofu on another pan and then add to vegetables, stir and stew for antoher 2-3 minutes.
Since after each meal I need to eat something sweet, this time I had just simple watermelon. Delicious!
I skipped supper and when I was going to sleep I felt so light… And even in the morning I had so much energy, thus I went running. Please, don’t think that I’m boastful, I just wanted to show you one day of typical vegan diet or rather how does it look like in my case. I really don’t spend long hours in the kitchen because I just don’t have time for that.
Finally, on more thing that I missed a lot, namely tea. It’s so simple, but so important.
