Coconut muffins

Few days ago I’ve eaten one of the best muffins ever – basic coconut muffins. I didn’t bake them by myself, but as usual once I’m given something delicious I later try to do it by myself. I didn’t have the exact recipe, only some hints on how to make them, so my version differs a lot. And even though they are not as tasty as the one I tried, they are tasty enough to share with others. So here’s the recipe :).

Ingredients:

  • 1 can coconut milk
  • 2/3 cup sugar
  • 1/4 cup vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 cup all purpose flour
  • 100g desiccated coconut
Mix together coconut milk, sugar, oil, baking powder, baking soda and salt. Gradually add flour and desiccated coconut mixing all the time. Fill muffin tins to 3/4 height. Bake in 200 degrees for around 20-25 minutes.

It’s a very simple recipe and, as with most muffins, they are really easy to prepare. If you find those muffins too basic, you can always add chocolate topping.
