Millet and spinach salad

Recently, I’ve been either baking sweets or making extra healthy things like salads, soups and spreads. Maybe it’s because the summer is almost over and I want to fully enjoy all those fresh, seasonal fruits and vegetables. Wonderfully sweet plum tomatoes and yellow string beans straight from the garden, fresh spinach and millet groats, which I can eat all the time.

There’s no need to write more, it’s just healthy and delicious food, and really easy to prepare.

Ingredients:

  • 150g millet groats
  • 2 cups cooked and cut yellow string beans
  • 3 plum tomatoes
  • 100g fresh spinach
  • 50g radish sprouts
  • 1 cup black olives
  • 2 tbsp pumpkin seed oil
  • 1/2 lemon
  • black pepper
Cook millet groats in a slightly salty water, do the same with yellow string beans. Cut beans into smaller pieces and tomatoes into cubes. Mix millet, beans and tomatoes with pumpkin seed oil, lemon juice from 1/2 lemon and freshly ground black pepper to taste. Add spinach, sprouts and olives and mix again gently.
