Courgette and leek soup

Ingredients:

  • 1 kg young courgette (3 small ones)
  • 1 large leek
  • 3 garlic cloves
  • 2 tbsp olive oil
  • salt, pepper
  • oregano
  • 3 cups water
Wash courgette and leek and cut into small pieces. Cook vegetables for around 10-15 minutes until they become soft. Meanwhile, add chopped garlic, salt and pepper to taste. In the end, add oregano and olive oil. Mix using a blender until you get smooth soup.

Before serving you can spread some roasted pumpkin seeds or wholemeal croutons on top.

Romaine lettuce and pumpkin

When I’m thinking about a dish I would like to prepare, there are few criteria which come to my mind. Sometimes I focus on the aesthetics, sometimes I think about the taste other times I just feel that my body wants something, that it lacks a particular vitamin or so and then I try to find this type of food which will provide me with it. Spinach and lentil curry

There are so many different ways to prepare a decent curry dish, you can use your own favorite vegetables and your own mix of spices. Coconut muffins

Few days ago I’ve eaten one of the best muffins ever – basic coconut muffins. I didn’t bake them by myself, but as usual once I’m given something delicious I later try to do it by myself. I didn’t have the exact recipe, only some hints on how to make them, so my version differs a lot. And even though they are not as tasty as the one I tried, they are tasty enough to share with others.
