I’m wondering when will I become bored with all those muffins. It gives me so much pleasure, at least for the time being. Thinking of new combinations and so on…
This time my proposal may seem a bit odd as coconut and cinnamon isn’t a popular couple, but those muffins are just great! As usual, you don’t have to spend hours in the kitchen to prepare them, 15 minutes is enough even including cleaning. Plus few more minutes for baking. There’s nothing more pleasant than this in a cold, winter morning. Add a nice cup of coffee and enjoy hot, fragrant muffins.
Ingredients:
- 2,5 cup flour
- 2/3 cup sugar
- 2 tsp baking powder
- 2 tsp vanilla sugar
- a pinch of salt
- 1/3 cup vegetable oil
- 1 cup soy milk (or any other vegetable milk)
- 1/3 cup fizzy water
- 1/2 cup desiccated coconut
- 2 tbsp cocoa powder
- 3 tsp ground cinnamon
Mix together flour, sugar, baking powder, vanilla sugar and salt. Add oil, soy milk and fizzy water and stir until you get plain dough. Add desiccated coconut and stir 4 times (literally 4 times). Pour a cocoa strip in the center and two smaller cinnamon strips at both sides and again stir 4 times. Put the dough into the muffin mould, bake for about 20 minutes in 200 degrees.
