Mushroom salad

I feel spring in the air. Beautiful, sunny days, so my kitchen is also sunny and colorful. I would like to try all those delicious spring vegetables, but it’s still a bit too soon for that. In the meantime i prepared this nice, winter salad. Winter, because the ingredients are the best for this part of the year, mushrooms, gherkins, sweet corn… But winter doesn’t mean downcast. This salad is very cheerful and really light, so if you want to loose weight before the summer this is something for you.

I love this salad for its original taste and its lightness. It’s really easy to prepare and you don’t need any elaborate ingredients. You can get everything in every grocery.


  • 750g mushrooms (prefered big and firm)
  • 1 tbsp vinegar
  • 1 can sweetcorn
  • 300g frozen green peas
  • 1 apple
  • 4 big gherkins
  • 3-4 tbsp olive oil
  • salt, pepper

First peel and wash mushrooms. Boil them for 15 minutes with 1/2 tsp salt and 1 tbsp vinegar (so they won’t become black). Peel the apple and gherkins, cut them into cubs, mix with the sweetcorn. Boil the green peas for about 3 minutes and after straining add to the rest of ingredients. Finally, cut mushrooms into cubs. Mix everything with olive oil and add salt and pepper to taste.

The salad is ready to eat!
