Chickpeas with tomato sauce

There are times when you come back home, tired after a long day, hungry and unable to spend long hours in the kitchen preparing some extraordinary dish. In such a days I usually feel tempted to don’t care about anything and just eat simple sandwich. Unfortunately, in the long term it’s not a good idea… Especially when you have a stressful lifestyle. That’s why I’m always prepared for such situations. It’s quite easy. You only need to have some canned chickpeas or kidney beans stored in your cupboard, and of course tomato sauce.

  • 1 can chickpeas
  • 1 can sliced tomatoes
  • 1 garlic clove
  • 1 tbsp olive oil
  • 2-3 tbsp parsley
  • salt, pepper
  • 100g wholewheat pasta

Cook the pasta al dente. Fry chopped garlic in the saucepan for 1 minute, then add tomatoes and boil them up. Next add chickpeas, salt and pepper to taste and stew for few minutes. Finally, add parsley. Serve with pasta.

Two servings, 15 minutes. :)
