Green soup with garlic croutons

Here’s another recipe for a green soup. I’ve already posted few similar recipes, all of them follow the same pattern: a lot of vegetables + water + spices + vegetable oil. The only thing that changes is the combination of different vegetables and spices, depending on what I find in the grocery/market/fridge.

So what’s the point in writing about it again and again. Well, it’s easy. Recently, many people have told me that even though they like my recipes, they found most of them really complicated and thus difficult. I can’t be objective, cause usually I think that my recipes are relatively easy, and even if I sometimes post something more sophisticated, I try to emphasize that this particular recipe is rather for “advanced chefs”.

So I’m on a mission – to show you as many different quick and easy recipes as possible :).


  • 1 broccoli
  • 250g green beans
  • 1 small green zucchini
  • a bunch of fresh parsley
  • few basil leaves
  • few tbsp olive oil
  • salt and pepper
  • 2-3 pieces of wholemeal bread
  • garlic clove
Wash the vegetables. Cut broccoli into smaller pieces, cut zucchini into cubes, cut off green beans ends. Place vegetables into pot and add 4 cups of water so that you’ll cover the vegetables. Cook for approx. 15 minutes until vegetables become soft. Add salt and pepper to taste and two tbsp of olive oil. Finally, add basil leaves and chopped parsley, blend everything together.

Now prepare garlic croutons. Slice pieces of bread into small cubes. Preheat the pan with 2-3 tbsp of olive oil. Fry chopped garlic for one minute, than add bread cubes and fry for another 2-3 minutes stirring from time to time.

Serve with croutons on top.

A really quick and easy lunch. Yummy!
