Spinach and lentil curry

There are so many different ways to prepare a decent curry dish, you can use your own favorite vegetables and your own mix of spices. I usually choose cumin, coriander, a touch of cinnamon, chili and turmeric, sometimes garlic and nutmeg. Each time is different and this is why I like it so much.

But if you need inspiration you can always try this one:


  • 250g red lentils
  • 2 onions
  • 3 carrots
  • 1 red pepper
  • 1 courgette
  • 500g fresh spinach
  • 4 tbsp vegetable oil
  • 2 tbsp curry mix
  • 200ml coconut milk
  • salt, pepper, chili

First cook lentils in a slightly salty water (10 minutes should be enough).

Heat the oil in a big pot with thick bottom, fry sliced onions together with spices stirring all the time. After 3 minutes add sliced red pepper, carrot and around 1tsp salt. Stew for around 10 minutes and add sliced courgette. Stew 5 more minutes and add chopped spinach and cooked lentils. Finally stir in coconut milk and add salt and pepper to taste.

Serve with rice or chapati bread or if you prefer less traditional way with millet groats.
