Courgette and leek soup


  • 1 kg young courgette (3 small ones)
  • 1 large leek
  • 3 garlic cloves
  • 2 tbsp olive oil
  • salt, pepper
  • oregano
  • 3 cups water
Wash courgette and leek and cut into small pieces. Cook vegetables for around 10-15 minutes until they become soft. Meanwhile, add chopped garlic, salt and pepper to taste. In the end, add oregano and olive oil. Mix using a blender until you get smooth soup.

Before serving you can spread some roasted pumpkin seeds or wholemeal croutons on top.
